Garlic Prawns Baguette
Ingredients
• Prawns – 400-500 grams and deveined
• Garlic – 4-5 pods and mashed (keep it a little rough for bite; I like it that way)
• Chili flakes – 1 tsp (add more for heat)
• Lemon juice – 1 big one
• Butter – 2 tablespoons
• Parsley – handful
• Salt to taste
• Slices of baguette
• Olive oil
Method
1. Heat olive oil in a work/pan
2. Add prawns and let them color on both sides (DO NOT cook them)
3. Add garlic and cook out the rawness
4. Add lemon juice and salt
5. Add half butter and some parsley
6. Remove prawns when done. Keep the juice in the wok.
7. Add a few tablespoons of water and cook the sauce down to desired consistency. Add butter and remaining parsley to finish the sauce.
8. In the same wok heat the baguette slices slightly (only to warm).
9. Place 3-5 prawns on a baguette.
10. Garnish with sauce and parsley.
